today i'm sharing a delightful squash soup using ingredients on hand. another version from december 2010, found in with this image, can be seen here.
using items on hand and in the garden i combined:
1/2 onion, chopped
1 large or 2 small sweet potatoes, chopped
1 butternut squash, chopped
2 cloves of garlic, chopped
2 inch segment of ginger, chopped
1 tart apple with skin, chopped
chicken broth (made with last week's roasted chicken)
1 hot pepper, sliced down the middle, removing the seeds
1 sprig of rosemary (6-8 inches)
1 large sprig of thyme
cumin
fresh ground pepper
sea salt
cream
i sauteed the veggies & spices, then added broth. simmered a bit, removed the pepper & herbs. then macerated the mixture in the food processor. strained slightly. added the herb leaves to the soup & heavy cream. tasted and delighted.
i will add toast spread with goat cheese to this meal, and a small arugula salad with a lemon based vinaigrette to this meal tonight. enjoy this menu monday!
